This was a simple soup that went well beyond its call of duty. The suspects were:
Frozen spinach in the fridge for about 3 months
Potatoes
Lentils
Green Chillies
Capsicum
Garlic
Salt
A dash of your favourite Butter/Butter substitute
I boiled them in huge big cauldron until they were soft and then ...BLEND BABY BLEND !!
It was beaut! The Garlic became slightly overpowering, but reducing it in proportion will allow the taste of all ingredients to come through quite nicely.
A nice way to welcome Winter indeed :)
